Easy Orange Yoghurt Cake


1/2 cup Eoss Classic Yoghurt
1/2 cup Rio Vista Olive Oil
1 cup caster sugar
1/2 teaspoon vanilla extract
Pinch of salt
1 teaspoon baking powder
Zest & juice of 1 orange
3 eggs
1 1/2 cups self-raising flour
1/4 cup honey


Set oven at 180c.
Grease 20cm cake pan.
In a medium mixing bowl, combine caster sugar & orange zest & rub with your fingers.
In a jug, whisk eggs, Eoss Classic Yoghurt, vanilla, oil & 1/2 of the orange juice.
Add the flour, salt & baking powder to the sugar/orange.
Mix well, then pour in wet ingredients & mix well again.
Pour mixture into cake pan & bake for 50 minutes, or until cooked.

In a pan, warm up the other 1/2 orange juice and honey, & pour over cooled cake.
